
Bake at 300 degrees F for 20 minutes, turning after 10 minutes. Turn the whole mixture out onto a parchment lined baking sheet, and spread out into a single layer. Most of the granola will be stuck to the nuts, but not all. Add the dry granola mixture into the bowl with the nuts and mix well. Put all of the dry ingredients into a food processor, and mix with several bursts until the oats are cut up, but not till it looks like flour. But if you are a walnut kind of person, feel free to use walnuts instead. So, I am writing it to use pecans, since they are really more my favorite. I’m not a big fan of walnuts, and seeing as how each of these little nuggets are built around a whole nut, I got really tired of the walnut taste. So, I got busy and made her recipe, and it came out great. Well, it just so happened that I was looking to make up some snacks that we could take on the plane with us, so this came along at a really good time. Her post talked about really organized people who make up their own snacks for travelling, and how these would be great for that purpose if one was organized (which she said she isn’t). Whole grain oats, with coconut and sunflower seeds provide the granola part, with just a touch of salt, and cinnamon for flavouring. Since nuts are naturally high in fat (the good kind though), no additional fat is added to the granola. Not only that, but they taste good too! Pecan halves, with all of their creases and ridges provide great places for your home-made granola goodness to stick to. These little crunchy mouthfuls are healthy and high protein, in keeping with my decision to focus on healthy cooking and eating.
